Is the twin carb setup a real choke or an enrichener like the Rebel?

Sounds like a true choke. Can you provide a pic of where the choke cable attaches (or should) to the carb?

well you could look at it.. A true choke is a second butterfly valve on the INLET of the carb. Looks similar to the throttle butterfly, but typically has a hole in it to let some air in. When choke is closed the carb draws a very rich mixture into the engine by sucking fuel through the normal jets.

The choke cable went from being inserted into the carb to latching on. It doesn't seem to fit anymore without being modified. Has anyone else ran into this or other problems doing this conversion?
maybe something like this on the end to replace the barrel end.

I just bought the dual carbs cause the old rebel i bought to rebuild had a fubar carb. i think this will solve the choke issue but i haven't mocked anything up yet.

dual enricher setups utilize either a 1 to 2 cable or the cable attaches to a rack that actuates both enrichers (better setup)

I buy used carbs if you want to sell the old one.
