Yes. I owned a VS750 Intruder. The 800 is identical. They are great bikes, well made, reliable, and very fast for an 800 v-twin. But, as for whether one will suit your needs or not I don't know. They are shaft drive and liquid cooled. They are still in production, so parts are not a problem.
The 700/750/800 Intruder has been in continuous production for 25 years. They were the first true custom look bike to come from Japan. The Intruder motor motor is solid, but as far as the bike, they are a lot more complicated than they look. Suzuki did a great job of hiding things, and if you start taking one apart, you will find a LOT of stuff that you didn't see to begin with, which might hinder building a clean bobber or something like that.
The only issue I have with the Intruder is that they have tube type tyres on wire spoke wheels. Everything else is great. They have no known weaknesses, other than the front pegs are mounted to a large chrome bracket, which drags fairly easily in turns, and can lift the front wheel right off the ground if you lean over too far. I never found that to be a problem. It's not a sportbike. Of course, anything can be wrong with a used one. Jerry.
