Modifications are essentially only limited to one's own imagination. There's bound to be mechanical limitations as far as how much the performance of the bike can be altered, but there's also cosmetic mods that can enhance the looks & allow the owner to "personalize" it.
It really boils down to what "you" want to do. When looking at your bike, you can decide if you'd like to add this or that, remove this or that, alter this or that.....these would be more or less cosmetic changes to suit your own taste.
Performance-wise, the 250cc Rebel is pretty much open to changes of the intake & exhaust (carbeuration & pipes)
Options:
Keep stock airbox, but open up pipes
Remove stock airbox, install an aftermarket air filter, open up pipes
Front & rear sprocket changes are also options to change the gearing range, but speaking only for myself, I'd be less inclined to go that route due to the relative hp limitations of the approx. 18 hp motor.
The 250cc Rebel is an excellent & viable motorcycle, but realistically, that 18 hp pretty much convinced me to alter the intake/exhaust "only" in regards to performance & I was content to leave it at that.
Again, it's a matter of what "you" want to do & then go from there.
